Walnut and Fig Brie in Croute
- 1/2 cup (125 ml) walnuts, divided
- 1/2 tsp (2ml) olive or walnut oil
- Pinch sea salt
- 2 tbsp (30 ml) fig jam or spread
- 1 (300 g) wheel Brie
- 1 sheet puff pastry, thawed
The appetizer is composed of Brie, walnut butter, and fig spread are baked in flakey puff pastry.
Preheat oven to 220°C (425°F) and line a small baking sheet with parchment paper.
To prepare walnut butter, puree 1/3 cup walnuts, oil, and salt until smooth in a small food processor. Spread over Brie and top with fig jam and remaining walnuts.
Place dough over Brie and press down lightly. Carefully flip over. Bring in 4 corners of the dough and pinch together decoratively to seal. Garnish with additional walnuts if desired and bake for 20 to 25 minutes or until golden brown. Serve warm as is or with crackers, apple or pear slices.
