Crostini with Mascarpone, Nectarines and Medjool Dates
Serves 8Ingredients:
- 1 French baguette, cut on the diagonal into 3/4-inch slices
- 2 tbsp. olive oil
- Salt and pepper to taste
- 8 oz. mascarpone cheese, at room temperature
- 3 small nectarines, pitted and cut into thin, bite-size slices
- 8 Natural Delights Medjool Dates, pitted and sliced
- Honey (optiona)
Preparation

- Preheat oven to 400°F. Brush baguette slices with olive oil and season lightly with salt and pepper. Place on a baking sheet and bake for 10 minutes or until crisp and lightly browned; let cool.
- Spread equal amounts of cheese onto baguette slices. Top with alternating slices of nectarines and dates. Drizzle with honey, if desired. Total time: 30 minutes Serves 8
