Cascade Chunky Applesauce
4 lb. Washington Golden Delicious or Granny Smith apples
2/3 cup sugar
3 tablespoons fresh lemon juice
4 ounces water
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 1/2 teaspoons vanilla extract
Peel, core and chop apples. Sprinkle sugar over apples. Combine lemon juice and water. Pour over apples; stir gently.
Transfer apples to sauce pot. Bring to boiling; cover and reduce heat to low. Cook 10 minutes or just until apples are soft, not mushy.
Stir cinnamon, nutmeg and vanilla.
Puree 1/3 of apples and cooking liquid in food processor or blender, until almost smooth. Return to sauce pot.
Cool or serve warm over ice cream; pork or lamb chops, or as a side dish to burgers or sandwiches.
Yields: 1 1/4 quart
